Dining Farm to the Market Tables
Dining & Culinary Services is in the middle of the first growing season of their 1-acre farm in the Eagle Heights Community Gardens! The vegetable farm aims to support student and staff learning opportunities and harvest delicious, campus-grown produce. Dining staff selected seeds and vegetable varieties that are unique and versatile for menus and programming, including vibrant and colorful varieties of herbs, greens, root crops, squash, and tomatoes. This summer, the Dining & Culinary Services Campus Farm has already harvested around 130 pounds of kale, with 110 pounds of the leafy green grown in a single week! You'll find produce from the farm on menus in our dining markets this fall.
